SNAP recertification with changing income after 6 years as a paralegal

I lost my job as a paralegal and my household is applying for SNAP for the first time. It has been a long 16 weeks. There are 6 people in my household. What did you submit and how long did approval take?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 16 weeks, and my county offered an interview by phone.
