SNAP recertification with changing income after 13 years as a production planner

My SNAP recertification is coming up and my income changed a lot since my layoff. This is my first time dealing with any of this. There are 13 people in my household. Is there an expedited option for people with very little income?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 8 weeks, and my county offered an interview by phone.
