SNAP recertification with changing income after 13 years as a data-entry clerk

I got a notice asking for proof of income and I am unsure what to send. I have read a lot of threads here and could not find my exact situation. There are 13 people in my household. Is there an expedited option for people with very little income?

Thanks for writing this out. I went through something close to it 10 months ago, and it got easier once I kept a simple log of every call and form.
