SNAP recertification with changing income after 11 years as a recruiter

I got a notice asking for proof of income and I am unsure what to send. There are 11 people counting on me, so I am trying to be careful. I have a final pay stub, a termination letter and my unemployment approval. Is there an expedited option for people with very little income?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 8 weeks, and my county offered an interview by phone.
