SNAP recertification with changing income

I got a notice asking for proof of income and I am unsure what to send. This is my first time dealing with any of this. There are 11 people in my household. Is there an expedited option for people with very little income?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 19 weeks, and my county offered an interview by phone.
