SNAP recertification with changing income - 7 months and counting

I got a notice asking for proof of income and I am unsure what to send. It has been weighing on me all week. The caseworker asked for bank statements too. Did they ask for anything unexpected?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 26 weeks, and my county offered an interview by phone.
