SNAP recertification with changing income - 7 months and counting

I got a notice asking for proof of income and I am unsure what to send. I worked as a procurement assistant before this. The caseworker asked for bank statements too. Is there an expedited option for people with very little income?

Thanks for writing this out. I went through something close to it last year, and it got easier once I kept a simple log of every call and form.
