SNAP recertification with changing income - 7 months and counting

I got a notice asking for proof of income and I am unsure what to send. I have been trying to stay organised about it. There are 13 people in my household. Is there an expedited option for people with very little income?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 10 weeks, and my county offered an interview by phone.
