SNAP recertification with changing income - 5 months and counting

I got a notice asking for proof of income and I am unsure what to send. There are 11 people counting on me, so I am trying to be careful. The caseworker asked for bank statements too. Is there an expedited option for people with very little income?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 21 weeks, and my county offered an interview by phone.
