SNAP recertification with changing income - 26 weeks in

I got a notice asking for proof of income and I am unsure what to send. It has been a long 26 weeks. There are 3 people in my household. What did you submit and how long did approval take?

Keep everything in writing and save the confirmation numbers. It made the follow-up calls so much easier.
