SNAP recertification with changing income

I got a notice asking for proof of income and I am unsure what to send. I worked as an insurance claims processor before this. The caseworker asked for bank statements too. Is there an expedited option for people with very little income?

Take photos of everything you send and write down the date. I had to resend one page and the record helped.
