SNAP recertification with changing income - 17 weeks in

I got a notice asking for proof of income and I am unsure what to send. Any experience at all would help. I have a final pay stub, a termination letter and my unemployment approval. Did they ask for anything unexpected?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 17 weeks, and my county offered an interview by phone.
