SNAP recertification with changing income - 12 months and counting

I lost my job as an HR coordinator and my household is applying for SNAP for the first time. There are 15 people counting on me, so I am trying to be careful. The caseworker asked for bank statements too. Is there an expedited option for people with very little income?
