SNAP recertification with changing income - 11 months and counting

I got a notice asking for proof of income and I am unsure what to send. I do not usually post, so bear with me. There are 8 people in my household. Is there an expedited option for people with very little income?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 16 weeks, and my county offered an interview by phone.
