SNAP recertification with changing income - 11 months and counting

I got a notice asking for proof of income and I am unsure what to send. I have read a lot of threads here and could not find my exact situation. There are 3 people in my household. Did they ask for anything unexpected?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 15 weeks, and my county offered an interview by phone.
