SNAP after a layoff: what documents did you send? - what worked for you?

I got a notice asking for proof of income and I am unsure what to send. There are 16 people in my household.

Thanks for writing this out. I went through something close to it 3 months ago, and it settled down once I kept a simple log of every call and form.
