SNAP after a layoff: what documents did you send? - what worked for you?

I got a notice asking for proof of income and I am unsure what to send. It has been a long 7 weeks. There are 7 people in my household. Is there an expedited option for people with very little income?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 7 weeks, and my county offered an interview by phone.
