SNAP after a layoff: what documents did you send? - what worked for you?

I got a notice asking for proof of income and I am unsure what to send. I do not usually post, so bear with me. There are 17 people in my household. Is there an expedited option for people with very little income?

Thanks for writing this out. I went through something close to it last year, and it settled down once I kept a simple log of every call and form.
