SNAP after a layoff: what documents did you send? - what worked for you?

I got a notice asking for proof of income and I am unsure what to send. I would rather hear the honest version than the polite one. There are 9 people in my household. Did they ask for anything unexpected?

Thanks for writing this out. I went through something close to it last year, and it got easier once I kept a simple log of every call and form.
