SNAP after a layoff: what documents did you send? - what worked for you?

I got a notice asking for proof of income and I am unsure what to send. Thank you in advance. There are 5 people in my household. Did they ask for anything unexpected?

Thanks for writing this out. I went through something close to it last year, and it settled down once I kept a simple log of every call and form.
