SNAP after a layoff: what documents did you send? - what worked for you?

I got a notice asking for proof of income and I am unsure what to send. There are 4 people in my household. What did you submit and how long did approval take?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 21 weeks, and my county offered an interview by phone.
