SNAP after a layoff: what documents did you send? (update)

I got a notice asking for proof of income and I am unsure what to send. I worked as a copywriter before this. There are 9 people in my household. What did you submit and how long did approval take?

Ask about expedited service. I was told it depends on how little cash and income you have right now.
