SNAP after a layoff: what documents did you send? (St. Louis)

I got a notice asking for proof of income and I am unsure what to send. It has been weighing on me all week. There are 6 people in my household. What did you submit and how long did approval take?

Thanks for writing this out. I went through something close to it 3 months ago, and it got easier once I kept a simple log of every call and form.
