SNAP after a layoff: what documents did you send?, recruiter here

I got a notice asking for proof of income and I am unsure what to send. It has been weighing on me all week. There are 17 people in my household. Is there an expedited option for people with very little income?

Thanks for writing this out. I went through something close to it last year, and it settled down once I kept a simple log of every call and form.

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 23 weeks, and my county offered an interview by phone.
