SNAP after a layoff: what documents did you send? (Raleigh)

I got a notice asking for proof of income and I am unsure what to send. I am in Raleigh, in case local advice matters. I have a final pay stub, a termination letter and my unemployment approval. Is there an expedited option for people with very little income?

Keep everything in writing and save the confirmation numbers. It saved me later.

Take photos of everything you send and write down the date. I had to resend one page and the record helped.
