SNAP after a layoff: what documents did you send?, payroll clerk here

I lost my job as a payroll clerk and my household is applying for SNAP for the first time. I am in Raleigh, in case local advice matters. The caseworker asked for bank statements too. Is there an expedited option for people with very little income?

Keep everything in writing and save the confirmation numbers. It made the follow-up calls so much easier.
