SNAP after a layoff: what documents did you send? (Knoxville)

I lost my job as a sales associate and my household is applying for SNAP for the first time. Thank you in advance. There are 14 people in my household. What did you submit and how long did approval take?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 17 weeks, and my county offered an interview by phone.
