SNAP after a layoff: what documents did you send?

I got a notice asking for proof of income and I am unsure what to send. I would rather hear the honest version than the polite one. There are 8 people in my household. Did they ask for anything unexpected?

Take photos of everything you send and write down the date. I had to resend one page and the record helped.
