SNAP after a layoff: what documents did you send? - any advice?

I got a notice asking for proof of income and I am unsure what to send. It has been a long 18 weeks. I have a final pay stub, a termination letter and my unemployment approval. Is there an expedited option for people with very little income?

Take photos of everything you send and write down the date. I had to resend one page and the record helped.

Thanks for writing this out. I went through something close to it last year, and it settled down once I kept a simple log of every call and form.
