SNAP after a layoff: what documents did you send? - any advice?

I lost my job as an HR coordinator and my household is applying for SNAP for the first time. I have been trying to stay organised about it. There are 9 people in my household. Is there an expedited option for people with very little income?

Thanks for writing this out. I went through something close to it 5 months ago, and it got easier once I kept a simple log of every call and form.
