SNAP after a layoff: what documents did you send? - any advice?

I lost my job as a customer-service rep and my household is applying for SNAP for the first time. It has been a long 25 weeks. There are 16 people in my household. What did you submit and how long did approval take?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 25 weeks, and my county offered an interview by phone.
