SNAP after a layoff: what documents did you send? after 6 years as a web developer

I got a notice asking for proof of income and I am unsure what to send. Any experience at all would help. The caseworker asked for bank statements too. Is there an expedited option for people with very little income?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 4 weeks, and my county offered an interview by phone.
