SNAP after a layoff: what documents did you send? after 5 years as a payroll clerk

I got a notice asking for proof of income and I am unsure what to send. I do not usually post, so bear with me. There are 5 people in my household. Is there an expedited option for people with very little income?

Keep everything in writing and save the confirmation numbers. It saved me later.
