SNAP after a layoff: what documents did you send? after 17 years as a production planner

I got a notice asking for proof of income and I am unsure what to send. I have a final pay stub, a termination letter and my unemployment approval. What did you submit and how long did approval take?

Thanks for writing this out. I went through something close to it 5 months ago, and it got easier once I kept a simple log of every call and form.
