SNAP after a layoff: what documents did you send? after 12 years as a janitorial supervisor

My SNAP recertification is coming up and my income changed a lot since my layoff. I worked as a janitorial supervisor before this. There are 12 people in my household. What did you submit and how long did approval take?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 21 weeks, and my county offered an interview by phone.
