SNAP after a layoff: what documents did you send? after 12 years as a customer-service rep

I got a notice asking for proof of income and I am unsure what to send. I do not usually post, so bear with me. The caseworker asked for bank statements too. Is there an expedited option for people with very little income?

Take photos of everything you send and write down the date. I had to resend one page and the record helped.
