SNAP after a layoff: what documents did you send?, accounts payable clerk here

I got a notice asking for proof of income and I am unsure what to send. I am in Birmingham, in case local advice matters. There are 15 people in my household.

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 8 weeks, and my county offered an interview by phone.
