SNAP after a layoff: what documents did you send? - 2 months and counting

I got a notice asking for proof of income and I am unsure what to send. I have read a lot of threads here and could not find my exact situation. There are 11 people in my household.

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 12 weeks, and my county offered an interview by phone.
