SNAP after a layoff: what documents did you send? - 2 months and counting

I got a notice asking for proof of income and I am unsure what to send. I am in Richmond, in case local advice matters. There are 18 people in my household. Is there an expedited option for people with very little income?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 5 weeks, and my county offered an interview by phone.
