SNAP after a layoff: what documents did you send? - 13 months and counting

I got a notice asking for proof of income and I am unsure what to send. I have been trying to stay organised about it. I have a final pay stub, a termination letter and my unemployment approval. What did you submit and how long did approval take?

Thanks for writing this out. I went through something close to it last year, and it got easier once I kept a simple log of every call and form.
