SNAP after a layoff: what documents did you send? - 12 months and counting

I got a notice asking for proof of income and I am unsure what to send. There are 5 people in my household. Is there an expedited option for people with very little income?

Thanks for writing this out. I went through something close to it 12 months ago, and it settled down once I kept a simple log of every call and form.

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 17 weeks, and my county offered an interview by phone.
