SNAP after a layoff: what documents did you send? - 11 weeks in

I lost my job as a retail manager and my household is applying for SNAP for the first time. I have read a lot of threads here and could not find my exact situation. There are 13 people in my household. Is there an expedited option for people with very little income?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 11 weeks, and my county offered an interview by phone.
