SNAP after a layoff: what documents did you send? - 11 months and counting

I got a notice asking for proof of income and I am unsure what to send. I worked as a paralegal before this. I have a final pay stub, a termination letter and my unemployment approval. Did they ask for anything unexpected?

Ask about expedited service. I was told it depends on how little cash and income you have right now.
