SNAP after a layoff: what documents did you send? - 10 months and counting

I got a notice asking for proof of income and I am unsure what to send. This is my first time dealing with any of this. There are 12 people in my household. Did they ask for anything unexpected?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 9 weeks, and my county offered an interview by phone.

Thanks for writing this out. I went through something close to it 10 months ago, and it settled down once I kept a simple log of every call and form.
