Not sure if my job search activity counts - first time posting

I have been applying to about 7 jobs a week as a paralegal, but I am unsure what my state wants in the log. I am in Charlotte, in case local advice matters. My state says to keep records for a year. Do interviews and workshops count?

Screenshots of the submitted application are handy backup when a posting disappears.

I record the date, the company, the job title, how I applied and any contact name. It takes a minute each and it covered me when I was asked for proof.
