Not sure if my job search activity counts after 5 years as a paralegal

I have been applying to about 5 jobs a week as a paralegal, but I am unsure what my state wants in the log. Some days I only network by email or attend a job fair. Do interviews and workshops count?

I record the date, the company, the job title, how I applied and any contact name. It takes a minute each and it covered me when I was asked for proof.
