Not sure if my job search activity counts after 11 years as an operations analyst

I have been applying to about 11 jobs a week as an operations analyst, but I am unsure what my state wants in the log. There are 11 people counting on me, so I am trying to be careful. Some days I only network by email or attend a job fair. Do interviews and workshops count?

I record the date, the company, the job title, how I applied and any contact name. It takes a minute each and it covered me when I was asked for proof.
