Not sure if my job search activity counts after 11 years as an HR coordinator

I have been applying to about 11 jobs a week as an HR coordinator, but I am unsure what my state wants in the log. Any experience at all would help. Some days I only network by email or attend a job fair. Do interviews and workshops count?
