Not sure if my job search activity counts

I have been applying to about 16 jobs a week as a teaching assistant, but I am unsure what my state wants in the log. It has been a long 16 weeks. I also did a résumé workshop at the library. Do interviews and workshops count?

Check the handbook on your state's claim site. It lists what counts in my state, and workshops were on the list.
