Applying for food benefits after losing my job - what worked for you?

My SNAP recertification is coming up and my income changed a lot since my layoff. There are 8 people counting on me, so I am trying to be careful. I have a final pay stub, a termination letter and my unemployment approval. Did they ask for anything unexpected?

I sent my last two pay stubs, the separation letter and a bank statement. I heard back in about 17 weeks, and my county offered an interview by phone.
